Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks which are left a little dirty so that the bacteria and yeast left behind enhances the next spirit.
Distilled in 2017 and bottled in 2021. This release was bottled for the Midlands Whisky Festivals 10th Anniversary from a single ex bourbon cask. Cask number 159 yielding 260 bottles at a natural cask strength of 58.7% ABV of which this is bottle number 44.
