2020 RELEASE SINGLE MALT 70CL
For their 2020 Release Single Malt, Eden Mill has produced a limited run of 800 bottles of Single Malt Scotch Whisky. The liquid they have crafted pushes the boundaries of their previous whisky expressions, incorporating Bourbon, Pedro Ximenez and Oloroso barrels as well as spirit distilled using Pale, Chocolate, Brown and Crystal Malt Barley.
This edition showcases the evolution of their cask and spirit, bringing you light vanilla and toasted cinnamon from bourbon barrels, combined with the rich fruit and subtle spice from the distinctive range of sherry casks, leading to a creamy biscuity finish.

Pale Malt Spirit aged in an ex-Islay Whisky Refill cask. Filled on 04/02/16.
This is a cask of Eden Mills standard pale spirit that has been matured in an ex-peated cask, to showcase the amount of peat flavour the cask itself can contribute to the spirit. The whisky is pale straw in colour, with a dry, almost-wood-smoke aroma, along with cereal-and-hay aromas. The peat level is mild-moderate, with the emphasis being more on the woodsmoke-bonfire-ember character.

Peated Malt Spirit aged in a Refill Bourbon cask. Filled on 20/07/16.
This is Eden Mills first cask of peated malt spirit that they've released, matured in a refill bourbon cask. The whisky is a straw-amber colour, with a more pronounced, phenolic peaty aroma. The peat level is richer, with a robust earthiness along with a dense, peat-smoke flavour. This is lightened with spicy oak and sweet vanilla character from the bourbon cask.

Eden Mill Head Distiller, Scott Ferguson has incorporated a selection of oloroso hogsheads, pedro ximenez hogsheads, american bourbon barrels, with a cask of chocolate malt spirit and crystal malt spirit to craft our 2019 Release Single Malt.
